POSITION SUMMARY: This internship role is designed for enrolled members of the Yavapai-Apache Nation to provide selected interns with the education and work experience necessary to qualify for employment as a Chef.

ESSENTIAL DUTIES:

This internship program is designed asa 2-year program providing on-the-job skills training and culinary education in commercial kitchen operations from steward up through Chef. As outlined in the attached workplan:

• The intern will work shifts in various roles to learn overall kitchen operations, gain food preparation skills and techniques, and complete tasks assigned to: Busser, Steward, Prep Cook, Line Cook, Sous Chef, and Executive Chef over the course of two (2) years.
• The intern will complete assigned studies in kitchen operations, food safety, recipe development, menu planning and pricing, inventory and cost controls, food preparation, and staff management.

QUALIFICATIONS (Indicate if Qualification is Required or Preferred):

Opportunities for Internships, Apprenticeships, and Coordinated Work Study programs may be available in lieu of formal education and work experience requirements for this position for enrolled members of the Yavapai-Apache Nation.

1. Must be an enrolled member of the Yavapai-Apache Nation.
2. Preferred Education: High School Diploma or GED
3. Work Experience:
   1. 1 year of experience in commercial food operations (restaurant, kitchen, distribution), required.
   2. 6 months' customer service experience (retail, food, amusement), preferred
4. Knowledge, Skills, and Abilities:
   1. Demonstrate ability and commitment to learn through a hands-on and study program, as outlined in intern workplan.
5. Professional Licenses & Certifications Requirements:
   1. Food safety certificate obtained within 60-days of starting internship.
6. Must be 18+ years old and be available for all shifts, including weekends and holidays.
7. Must be eligible to work in the U.S. and pass a drug test and background check for an AZ Gaming License.
8. Must adhere to all Cliff Castle Casino Hotel policies and procedures.
9. Must be committed to providing exceptional guest service through a welcoming, friendly, and professional environment. Aim to exceed guest expectations with attentive, personalized service and prompt responses and resolution.
